If you're into preparing sushi at home or like slicing up your fresh-fish-find to enjoy with a little wasabi and soy sauce, then this is definitely a knife to consider. It takes practice to master the smooth, single-action slice that produces those attractive little slabs but when you try it with one of these you'll understand why there's a dedicated knife for the task.

Sashimi is not all they're good for of course. Like many of the knives you see on tanebocho.com, this knife is a jack of all trades, master of one.

A good sashimi knife will make you smile all through the week as your reach for it with nary a fish in sight - yes, you can slice ham with a yanagiba. And when the weekend comes and your shiny-eyed little fishy is looking up at you from the cutting board, just asking to be transformed into a plate of sliced satisfaction... you'll be ready.  

 

Tanegashima sashimi knives are hand-forged of high-carbon steel for an edge that stainless steel knives simply can't match, but at this affordable price. They're stylish too - the blade displays the blows of the craftsman's hammer and the attractive cherry wood handle is branded with the famous round hanko of Ikenami Hamono, together with the kanji characters 'te-uchi Tanegashima ('hand-forged Tanegashima').

Sashimi knife blades are measured from the 'chin' of the blade to the tip. The sashimi knife featured on this page is available in 170mm or 200mm blade lengths  Both are manageable but if your workspace is small then we suggest the shorter of the two.
